Enjoyed your presentation at the CCA meeting in Katy last night. Have looked on the website for the pan sauteed trout recipe you mentioned and didn't find it. Could you email it to me? I'd appreciate it very much.

A couple months ago I purchased a bottle of Texas Gourmet Sidewinder Searing Spice from Crabby Daddy's up here in Spring, Texas. While not as spicy as I was expecting considering the name I found it to be delicious. I used it on everything from fish to chicken and my family thought I was a gourmet cook. I finally ran out of it and purchased some more today.
Imagine my surprise when the Texas Gourmet Sidewinder Searing Pice I bought today tastes absolutely nothing like what I bought several months back. The stuff I bought previously had an almost sweet taste to it with a gentle hint of pepper. I remember thinking when I bought it that the name Sidewinder Searing Spice didn't seem to fit, but it tasted so good I just blew it off.
Is it possible that one of your other products was actually mislabled as Sidewinder Searing Spice? If not, it would be a shame that the taste I had could not be duplicated, it was fantastic. Please let me know if you have what I am looking for.

This Sunday morning you talked about icing venison in an ice chest. I was not able to hear the complete story. Could you please explain this process.
